LC is my favourite gamemode, and UCH was something I sunk hundreds of hours in to, so it hurts to see LC be pretty dead most of the time, so here is some feedback on problems and solutions from my experience if rectified would make it a much better experience.
Problems:

Birb doesn’t throw half the time, and it is not a viable way to defeat the Dragon. Since his roar just makes him completely useless.

The button (I need not go in to this since the devs know of this issue)

Roar Spam, it makes the game unplayable, the knights best bet is to swarm the dragon and hope not to get killed with the outlandishly big hitbox, but against a handful of players? They do not stand a chance

Dragons spinning around over and over with high DPI making them impossible to kill

The gameplay promotes less strategy and scheming from the knights, rather they have to “bumrush” the dragon when he is distracted
Solutions: (These are entirely based on my opinion of the game)
- Increase the cool-down on the roar to make the dragon have to not rely on it/decrease the range of the roars effect
OR

to have a certain number of roars to use depending of the number of players in your game (Times 1.5 roars to the number of players rounded down to the nearest number, for example if there are two knights in the game the dragon will have 3 roars, three knights and the dragon will have 4 and so on)

When the knight is scared, don’t let him drop the Birb, he is scared for his life, he should not drop his weapon. The Birb being eaten is good enough if the dragon should find it first, when the Birb spawns it should be a race between who gets it first. And if the Birb is ineffective or misses then the dragon can still eat it.

Give the dragon a new ability, in Grand Quest in the Casino, the very same dragon can breathe fire, maybe add it so if the dragon eats the Birb he gets a reward for it in the form of fire

Add a buff to the last remaining knight called bravery or something, giving him a small speed buff

Add a buff to the dragon if a certain amount of time passes without any knights being eaten called blood-lust or something giving him smaller cool-downs on his bites since the knights can run the dragon around very easily if they know what they are doing

If the dragon spins around too many times at once he becomes dizzy, making 360 spam impossible, an effect that makes the dragons turning a little more sluggish (Like 10 times, obviously dont punish players just for looking around)

Camping too much in the same area without moving as the dragon should give a warning like “You feel your button start to slide down as you stand still”, an incentive for a more aggressive playstyle.

Allow the player to choose a dragon colour at the start of the game.

Reduce the size of the knights hitbox, get many deaths that have felt unfair.

Decrease the hitbox for the button on the dragons back, it feels too easy to get a kill a lot of the time (when the button works)

Knights not able to walk on-top of the dragon, it feels a little unfair for the dragon since that is in most cases a guaranteed death
Kinda a small summary, I feel like the game should be balanced enough for the dragon to still eat all the knights however I feel like the knights should still have a fighting chance against the dragon, the dragon should be played skilfully just as much as playing knight is. I make a point to not ever use the roar when I am the dragon out of principle, not because I dislike the mechanic but I want the odds to be fair, but just like the boss in Zombie Massacre, the dragon should feel more difficult when there are more players. Sorry for the small essay, just my thoughts on the current state of the gamemode and how it can improve for both sides.
